Thornfalcon’s vineyards span two plots across the farm.
The first was planted in 2023, and is made up of the classic champagne varieties - Chardonnay, Pinot Noir and Meunier. Our second plot was planted in 2024, with disease-resistant hybrid vines that make delicious wine with less well-known grape varieties. This plot is comprised of Seyval Blanc, Solaris, Voltis and Cabernet Noir.
Thornfalcon’s soil is well-draining loamy clay. Previously used as pasture, the fields haven’t been tilled or sprayed in living memory, and are rich in biodiversity with abundant fungi and microbial life. We farm our vineyards and land as sustainably as possible. Unusually perhaps for a UK vineyard, we’re neither tilling or using herbicide around the vines to limit disruption or damage to the rich life under the ground, and to avoid releasing carbon.
Alongside the vineyards, we have converted one of our barns into a winery, and the Thornfalcon range of wines will all be hand-picked and pressed at our farm. It takes several years from first planting a vineyard until the grapes are ready to harvest and to press, and while we are waiting for our own vineyard to mature, we are sourcing grapes from select partners and local growers in the West Country. The first Thornfalcon wines will be available from mid-2025, and in time, we aim to have a range of sparkling and still wines under our label.
