Farm

Planted, picked and pressed by hand

Thornfalcon Winery & Press is a 40-acre farm, with two vineyards and orchards, a two-acre swimming and wildlife lake, a plentiful organic vegetable garden, a family of chickens, resident swans, and a bevy of doves. With a naturally inventive approach to farming and flavour creation, a range of boutique, hand-grown, small-batch still and sparkling wines and bouche cider will be available from 2025. Sustainability and wildlife conservation sit at the heart of what we do, with rewilded meadows, newly planted woodland, and nature corridors across the farm.

Thornfalcon Winery and Press has two fields of vines. The first plot was planted in 2023 with the champagne varieties Chardonnay, Pinot Noir and Meunier. The second was established in 2024 with disease resistant hybrid varieties Solaris, Voltis, Seyval Blanc and Cabernet Noir. Further details about our vineyards and our approach to farming here.

Our two orchards produce around ten tonnes of cider apples, a mix of Kingston Black and Brown apple trees. Using the original 19th century cider press, we hand press all our apple juice and cider using traditional methods. Further details about our orchards here.

A two-acre swimming and wildlife lake, a haven for nature. We have resident swans, a plentiful carp population, and migrating birds visiting on their flight path. A fishing hut, pontoon, boat and traditional Finnish wood-fired, off-grid sauna sit on the lake edge.

A large and plentiful vegetable garden supplies us and our guests with organic fruit and vegetables, and the kitchen orchards provide apples, pears, plums, apricots, peaches, figs, mulberries, crab apples and kiwis. Plus a resident flock of chickens and a bevvy of doves.
