Our Story

Thornfalcon Winery & Press was born in 2023, marrying our love of great food and drink, hospitality, the West Country and wildlife conservation. We moved into a beautiful 250-year old farm in the heart of West Somerset, and set out to create a boutique winery and a hospitality experience where we could welcome visitors with artfully crafted drinks, experiences and escapes, immersed in nature.

Hand grown, harvested and created

The alchemy of flavour and the art of experience sit at the heart of Thornfalcon. Everything here is grown, made, blended and curated by hand.

A winemaking haven in a picturesque village

The picturesque village of Thornfalcon is nestled between the Quantocks, Blackdown and Mendip hills, in the Taunton Vale in Somerset. Protected on all sides by hill ranges that shield our vines and orchards from some of the weather coming from the coastlines lying north and south, Thornfalcon is situated in a micro-climate, on fertile clay soil.

Our Commitment to Quality

Vines have been carefully selected to marry our unique climatic conditions. Across our farm, we have Chardonnay, Pinot Noir Meunier, Cabernet Noir, Solaris, Seyval Blanc and Voltis; Kingston Black and Brown cider orchards; and a wide range of fruit trees and botanicals. Grapes from Thornfalcon vines will be ready from 2026 on, and we also select the best and ripest fruit from vineyard partners in the South West to support our drinks production.

We savour sustainable growing, the alchemy of making, the beauty of nature, and great wine, cider, people and food. Our first drinks and products will be available from 2025 onwards – watch this space.

Panu is the Vineyard Manager and Winemaker. He has a long history in the London drinks industry spanning 25 years, specialising in flavour, drinks creation, events and hospitality. Now he has turned his hand to the growing of the vines and the alchemy of winemaking.

Sophie is the MD of Thornfalcon Winery & Press, overseeing the expansion of the farm and business. Sophie also runs a strategic consultancy for Culture, Media and Heritage, and was previously the Director of Audiences, Digital & Commercial at the V&A – the family of museums dedicated to the power of creativity.
